We make stone ground, organic chocolate. Cacao is so complex in flavor that we want to let it speak loud and proud. That is why we do less to bring you more. We stone grind organic cacao beans into perfectly unrefined, minimally processed chocolate with bold flavor and texture, unlike anything you have ever tasted.
Our stone ground chocolate making process is inspired by centuries-old Mexican chocolate traditions. We use authentic Oaxacan stone mills called molinos to grind our cacao, with granite millstones hand carved by co-founder Alex. These stones minimally refine the cacao beans, capturing all their vibrant flavors and allowing tiny bits of cacao and organic cane sugar to remain in the finished chocolate. The result: chocolate brimming with bright tastes and bold textures. Every piece of Taza Chocolate is made from bean-to-bar at our Somerville, Mass factory. We roast, winnow, grind, temper, and mold our chocolate in house and by hand.
Taza founder Alex Whitmore took his first bite of stone ground chocolate while traveling in Oaxaca, Mexico. He was so inspired by the rustic intensity that he decided to create a chocolate factory back home in Somerville, MA. Alex apprenticed under a molinero in Oaxaca to learn how to hand-carve granite mill stones to make a new kind of American chocolate that is simply crafted, but seriously good.
Taza is a pioneer in ethical cacao sourcing. We were the first U.S. chocolate maker to establish a third-party certified Direct Trade Cacao Certification program and to publish an annual Cacao Sourcing Transparency Report, detailing our sourcing practices. We maintain direct relationships with our cacao farmers and pay a premium above the Fair Trade price for their cacao. We partner only with cacao producers who respect the rights of workers and the environment.
Alex has now built Direct Trade sourcing relationships with growers in the Dominican Republic, Bolivia, and Belize. We host annual Chocolate Week tours at origin, bringing the Direct Trade relationship even closer to customers and to farmers.
Taza Chocolate is now available across the country and abroad in specialty, natural, and gift stores, and is used in the kitchens of many fine restaurants. We have been featured in major publications including Gourmet, The Art of Eating, Food & Wine, and more.
The Taza Chocolate Factory Store offers tours and has viewing windows into manufacturing spaces. Visitors can learn more about Taza and how we make stone ground chocolate, and sample our full product line.
The following products are certified USDA Organic, Direct Trade, Gluten Free and Kosher Pareve, and Non-GMO Project Verified. It is also dairy free, soy free, and vegan.

Guajillo Chili Chocolate
Chilis are often added to chocolate in Mexico for a spicy kick. We grind single-origin Dominican cacao using vintage Oaxacan stone mills to preserve its complex flavor and rustic texture, then blend in organic chilis. The result is a bright, bold chocolate that perfectly balances sweet with heat.
Chipotle Chili Chocolate
Smoky chipotle chilis make a perfect counterpoint to the fruity, bittersweet intensity of our Chocolate Mexicano. With the medium-hot tingle from the chilis and the rustic texture of our stone-milled dark chocolate, Chipotle Chocolate Mexicano is a feast for all the senses.
