2 Medium Avocados
3 tbsp. Fresh Lime Juice
2 Kiwis, peeled & cubed
1/4 cup Red Onion, finely chopped
2 tbsp. Red Pepper, finely chopped
3 tbsp. Cilantro, chopped
1/4 tsp. Crushed Red Pepper
1/4 tsp. Salt
Freshly Ground Pepper, to taste
Cube avocados and scoop into bowl; top with lime juice and toss gently. Peel and cube the kiwis; add them to avocados along with remaining ingredients. Refrigerate until ready to serve.
You can also make this with Mangoes or Pink Grapefruit in place of the Kiwis.
