Now that the weather is warmer, it’s time to break out the lighter, veggie salads. One of our favorite things to do is have a great salad with our meals.
But, salads can get a bit boring, so I really try to change it up so my kids know that eating veggies is fun!
One fun way to keep the salad different are to make veggie noodles. If you don’t have a spiraler to make noodles, thinly slicing the cucumbers will work in a pinch!
It totally changes up our salads and my kids love to help turn the crank.
This week cucumbers were on sale so we had all sorts of cucumber salad, like this balsamic vinaigrette one.
I decided to try a nice creamy one and came up with this “BLT” cucumber salad. It is a low carb alternative to a BLT….you won’t miss the bread. (Or the lettuce for that matter)
The amounts in the recipe below are for a single serving, but you can easily double and triple it for a side dish.
- 1-2 cucumbers
- 1 chopped tomatoes
- 3 slices of bacon cooked
- 1-2 tbsp. of mayonnaise
- ⅛ tsp. garlic powder
- sea salt
- black pepper
- Spiral cut your cucumbers.
- Add in your tomato, spices and mayo and stir.
- Add crumbled bacon.
Make it a goal to source locally grown organic produce, organic pastured eggs, raw dairy products, oils, and grass-fed meats as much as possible.
